Charles Rolls, l’uomo che ha rilanciato sul mercato il Plymouth Gin, e Tim Warrillow si sono resi conto che il famoso Gin Tonic fosse composto per 3/4 d’acqua tonica che per lo più era creata con ingredienti artificiali. Essi erano dunque colpiti da come la gente fosse disposta a pagare molto per un gin tonic con gin di alta qualità, ma con toniche di scarsa qualità. Così nel 2005 hanno lanciato, nel Regno Unito, il marchio Fever-Tree il cui nome proviene dal gergo comune con cui viene chiamato l’albero di cinchona dal quale si estrae il chinino, ingrediente chiave per la produzione della tonica. Fever-Tree Mediterranean Tonic Water viene ottenuta da acqua di fonte, oli essenziali di fiori, frutti ed erbe raccolti sulle coste del Mediterraneo e chinino naturale proveniente dalle profonde foreste della Repubblica Democratica del Congo. In questa tonica si usa meno chinino rispetto all’Indian, creando così, con l'aggiunta di rosmarino e timo limone della Provenza, un'acqua tonica molto più delicata e profumata. Perfetta per creare un delicato Gin Tonic con gin mediterranei come il Gin Mare, il Gin Sea, il Gin Loe o il Gin Caprisius.
