The colourful feature of the butterfly pea flower Its deep blue colour is the result of a natural pigment: anthocyanin, from the flavoid family. Anthocyanins are coloured molecules that change colour according to the surrounding pH. At an acid pH of less than 7, the anthocyanins turn pink-red, while at a neutral pH they turn blue, and yellow-green in a basic pH of more than 7.       Because of this, depending on the infusion you choose, the blue colour obtained will be able to change to one color as to another.
